nnaloh, who also has to avoid gluten, has come up with gluten-free soup dumplings, using a gluten-free flour and a very small amount of xanthan gum. I've not tried this recipe (I make matzoh balls about every other year, and no other dumplings--matzoh balls aren't remotely gluten-free, but our household doesn't need to avoid gluten), but I trust Nalo.

Not free, but avoidant. I won't get horribly sick if I eat it, but I will bloat up like the new moon. With most grains, in fact.

Xanthan gum? That's the stuff, when you chew it, you start writing books short on plot but long on bad puns?
