I made a big salad for lunch today, prompted by having leftover chicken from yesterday. I had the chicken because I called in a takeout order of wonton soup, and the person who took the order thought I wanted the "chicken wonton soup," which is their very good wonton soup, plus strips of white-meat chicken, and with fewer vegetables. I was a little grumpy about the misunderstanding last night -- I really like snow peas -- but salad dressing was just what the chicken needed. .
Along with the chicken, I used most of a small hydroponic lettuce, two small cucumbers, two scallions, and the cooked chicken. I got
cattitude to make a salad dressing, and I did the rest of the work. It was good, and I probably wouldn't have thought of making just a salad for lunch, this time of year and with what we had in the house.
