Wheat-free asparagus quiche, courtesy of [livejournal.com profile] minkboylove. I haven't tried it myself, and am more likely to do a standard wheat-based crust, but the instructions for the filling are tempting in terms of asparagus, and the crust recipe may be useful to someone reading this.

Thank you! I hope it's useful to someone. It's so hard sometimes to deal with Man's wheat-intolerance and it doesn't help that he's a sucker for breads, cakes and pastries - everything he can't eat, really. You forget what a staple wheat products are in our diets until the allergy clinic says no!

I disagree about the need for pre-cooking the asparagus. Cook briefly and DRAIN, to keep the eggs from getting watery.
