This one is a bit of a novelty. Small, with green-and-pink skin, and a silly name. We bought one yesterday at the Greenmarket, along with two each of the NY428s and the Jonathans, and half a dozen Macouns, which we already knew we liked.

This morning, [livejournal.com profile] cattitude took the pink-a-boo apple out, and observed that it was much less pink when not in direct sunlight. Then he bit into it: the flesh of the apple is distinctly pink. Other than that, it's tart and somewhat juicy, without much other flavor, and very little sweetness. If it were sweeter, children might like it just for the color. If you want pink homemade applesauce, you'd probably do better using some other apple, and cooking it with some of the peel, the way my grandmother did (or maybe using a bit of food coloring).
