Thanks for the offer. I experimented a bit when I stopped being able to eat hot peppers, and I found that the Penzey's Singapore seasoning (which contains a lot of ground pepper), smoked paprika, and ginger works pretty well. I started the experiment by copying a list of every non-capsicum ingredient in a chili powder I liked, and found that, for example, the presence or absence of fenugreek didn't seem to matter.

Adrian and Cattitude sometimes add spiciness (usually with either a chili-lime powder or sriracha) to their servings, the same way people sometimes add salt or pepper at the table.
